California Roll Salad

Italian Chopped Salad! Salami, pepperoni, mozzarella, and so much more come together to create a medley of signature Italian flavors. This easy to make chopped salad is flavorful, filling, and delightfully simple!

Ingredients

2 T. mayonnaise
1 T. sriracha
1 T. fresh lemon juice
Kosher salt
to 2 heads Boston lettuce, separated into leaves
1 1/2 cups cooked short-grain brown rice
Persian cucumbers, thinly sliced into ribbons
avocado, cut into pieces
8 oz. surimi or crabmeat
scallion, thinly sliced
Furikake seasoning, for sprinkling

Directions

  1. In small bowl, whisk together mayonnaise, sriracha, lemon juice, and a pinch of salt.
  2. Divide lettuce, rice, cucumber, and avocado among bowls.
  3. Top with surimi, then drizzle with dressing.
  4. Sprinkle with scallion and furikake if desired.
